August; Quick & Easy Mid Week Dinner

This months Quick & Easy Mid Week dinner is Spiced Chicken Pizza. A delicious meal the whole family can enjoy.

Spiced chicken pizza
• 1 tablespoon extra virgin olive oil
• 1 medium (150g) onion, chopped
• 250 g chicken mince
• 35 g taco seasoning
• 2 wholemeal pizza crusts
• 1/4 cup (90g) tomato passata
• 1 medium (200g) red capsicum, sliced thinly
• 1/4 cup (60g) sliced pickled jalapeno peppers
• 1/2 cup (100g) light sour cream
• 1/4 cup finely chopped coriander

Method
Spiced chicken pizza
• 1 Heat oil in a medium frying pan over a medium heat and add onion. Cook, stirring, for 2 minutes or until softened. Add the mince and seasoning. Cook, stirring, for 10 minutes or until mince is browned and cooked through.
• 2 Meanwhile, preheat oven 200°C (180°C fan-forced). Place the pizza bases onto oven trays lined with baking paper. Spread tomato passata over the bases; top with the chicken mince mixture, red capsicum and jalapenos. Bake for 15 minutes or until browned lightly.
• 3 Serve with combined sour cream and coriander.
